Every decision we make begins with the origin of our ingredients. By working with nature rather than against it, we embrace the changing seasons, preserve moments of abundance, and let availability shape what we create.

how we work
100% Danish ingredients
We work only with Danish ingredients. That means no lemons, no black pepper, no far-flung spices. Not because we don’t like them, but because we’ve chosen to cook within the limits of what our own landscape gives us. Instead, we turn to wild herbs, fermented fruits, and preserved vegetables to create bold, bright flavors.
Seasonal, Always
Our menu shifts with the seasons, because we believe food should reflect the environment around us. Some weeks that means a plate of summer tomatoes with pickled elderflowers - other times, it’s root vegetables, grilled herbs or a whole plaice. We don’t try to force a permanent menu in a world that changes daily.
organic, Regenerative Farming
All our vegetables come from small-scale, regenerative farms in Denmark. These are growers who think long-term, who care for the soil, protect biodiversity, and farm with nature rather than against it. We supplement their work with what we grow ourselves: edible flowers, herbs and leafy greens from our own little garden.
Low Waste, Low Impact
We believe the most sustainable ingredient is the one that gets used. That's why we preserve the abundance of each season through fermenting, pickling and drying, and constantly look for ways to use every part of an ingredient. We reduce our food waste and minimise unnecessary packaging and single-use plastics wherever possible.
Responsible Seafood
Our fish is always responsibly caught in Danish waters, sourced through small, ethical fisheries that prioritise marine health and avoid industrial practices. We know where each catch comes from and who brought it in. By working closely with Danish fishers, we support local livelihoods while helping protect the future of our seas.
Social Responsibility
Sustainability also means taking care of people. We’re transparent not only about where our food comes from, but also about how we work. We offer fair wages and decent working conditions, and we aim to foster a healthy, inclusive workplace where people want to stay.
